Trini Bodi – Quick and Easy Sautéed Spiced Green Beans

Another quick and easy side dish for a Trini curry. Bodi is just the Trini word for long green beans. I am using regular green beans here but traditionally on the island, this is made with long green beans. This is a simple recipe and very customizable. I like my beans with a bit of bite, so they are still slightly firm. Though bodi can be made so the beans really have time to cook down and soften. Tomato can also be added to this when cooking bodi but I made a very simple curried and slightly spicy side dish.

Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 bunch green beans or long green beans, 1 pound cut into 2 inch pieces
  • 2 garlic cloves minced
  • 1/2 onion diced
  • 1/2 teaspoon hot pepper minced optional
  • 1/2 – 1 teaspoon curry powder
  • salt to taste
  • water as needed

Instructions
 

  • In a frying pan add your oil on medium heat.
  • Add your diced onions and sautee until translucent.
  • Add your hot pepper and sautee for a minute.
  • Add your minced garlic and sauté for a minute.
  • Add your curry powder and sautee for 30 seconds and follow with your green beans.
  • Add a splash of water, about 1/4 cup and mix until well coated.
  • Season with a pinch of salt and cover with a lid to steam green beans. When the beans are almost cooked to your liking, remove lid to let any extra liquid cook off.
  • Serve hot on ad a side or with roti like Sada roti or paratha roti (buss up shut).
