Harvest Salad

I made a wonderful harvest salad topped with SweeTango apples! Crispy, juicy and delicious. I am obsessed with these apples! I have made several apple recipes since receiving these and everyone of them has been a hit! This is less of a “heavy” harvest salad though I still find it filling because of the number of ingredients in this salad. The eye-catching topping, the sliced SweeTango apples are the love child of the Honey Crisp Apple and the Zestar! apple and has all the amazing qualities of both! Harvest Salad

Ingredients
  

  • 1 (284 grams) large bag or box of spring mix washed and dried
  • 1 lemon to prevent apples from browning

Dressing

  • 2-3 garlic cloves minced
  • 2 teaspoons Dijon mustard
  • 2 teaspoon grainy mustard
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • 1/3 cup olive oil
  • Salt to taste
  • Pepper to taste

Toppings

  • 1-2 SweeTango apples thinly sliced
  • 1/3 cup candied walnuts or toasted walnuts
  • 6 strips crispy bacon chopped
  • 1/2 cup feta cheese crumbled
  • 1/3 cup dried cranberries

Instructions
 

  • Make your dressing by mixing all your ingredients together in a bowl and adjusting salt and pepper to taste.
  • After prepping all your ingredients. If slicing your apples, the best way to prevent them from browning is tossing them in a bit of lemon juice.
  • construct your salad starting with your spring mix and tossing with some dressing to taste.
  • Carefully top your spring mix with the toppings. You can use a full written amount or add more or less of each topping as desired. This recipe is extremely customizable to taste. Place your sliced SweeTango apples on your salad last, fanning them out on top of your salad if you want to make it aesthetically pleasing.
  • Add more dressing if desired, toss your salad.
  • Serve immediately.
