Bring a pot of water to boil and once boiling, season with salt.
In a bowl place ricotta, egg, pinch or salt, pinch of nutmeg, parmesan and flour and mix well.
Test a dollop of your dough in you pot of boiling water, if it holds its shape place the rest of the mixture into a piping bag and pipe 3/4 inch pieces into salted boiling water. Testing is required because your ricotta may have more of less liquid depending on the brand.
If your test did not work, add flour a tablespoon at a time to make batter thicker.
Cook until nearly doubled in size, 2-3 minutes and serve with sauce of your choice!
