Piped Ricotta Gnocchi

Simple and easy way to make ricotta! Serve with your sauce of choice, this is a spicy tomato cream sauce.

Ingredients
  

  • 1 cup ricotta strained
  • 1/2 cup grate parmesan
  • 1 large egg
  • Pinch of salt plus more for seasoning
  • Pinch of nutmeg
  • Pinch of black pepper or to taste
  • 1/2 cup flour plus more if necessary

Equipment

  • 1 Piping bag with large opening

Method
 

  1. Bring a pot of water to boil and once boiling, season with salt.
  2. In a bowl place ricotta, egg, pinch or salt, pinch of nutmeg, parmesan and flour and mix well.
  3. Test a dollop of your dough in you pot of boiling water, if it holds its shape place the rest of the mixture into a piping bag and pipe 3/4 inch pieces into salted boiling water. Testing is required because your ricotta may have more of less liquid depending on the brand.
  4. If your test did not work, add flour a tablespoon at a time to make batter thicker.
  5. Cook until nearly doubled in size, 2-3 minutes and serve with sauce of your choice!
