Super quick pan seared shrimp with a shortcut Romesco sauce!
Very tasty and can be eaten as a whole meal or appetizer.
Shrimp and Romesco(ish) Sauce
Ingredients
Romesco (ish) Sauce
- half a tomato
- whole red bell pepper sautéed in olive oil
- 2 garlic cloves
- 8 raw almonds
- tablespoon of bread crumbs
- 1/4 cup olive oil
- small bunch parsley
- 1/2 lemon worth of lemon juice
- salt and pepper to taste
- 1/4 teaspoon smoked paprika
Shrimp
- 10-12 shrimp deveined peeled with tail left intact.
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion ion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- To serve
- Tablespoon of olive oil
- red pepper flakes
- Toasted bread
Instructions
- First make your romesco sauce. Add all your ingredients into a blender and pulse until smooth. Taste and add more salt if necessary.
- Set aside until shrimp is ready.
- To make shrimp, season with all your seasonings, and in a very hot cast iron, add a bit of oil and pan sear the shrimp, flipping once until nicely browned on each side but not overdone.
- Top your romesco with your pan seared shrimp, top with more olive oil, sprinkle with red chili flakes it desired and garnish with parsley.
- Serve with toasted bread.
