Tasty, simple and quite fun to make. Made this months ago and forgot to post so sharing with y’all now. If you have a piping bag, this is such an easy, cleaner and fun way to make gnocchi! Will have to try this technique with potato gnocchi but I expect the same results.
Piped Ricotta Gnocchi
Simple and easy way to make ricotta! Serve with your sauce of choice, this is a spicy tomato cream sauce.
Equipment
- 1 Piping bag with large opening
Ingredients
- 1 cup ricotta strained
- 1/2 cup grate parmesan
- 1 large egg
- Pinch of salt plus more for seasoning
- Pinch of nutmeg
- Pinch of black pepper or to taste
- 1/2 cup flour plus more if necessary
Instructions
- Bring a pot of water to boil and once boiling, season with salt.
- In a bowl place ricotta, egg, pinch or salt, pinch of nutmeg, parmesan and flour and mix well.
- Test a dollop of your dough in you pot of boiling water, if it holds its shape place the rest of the mixture into a piping bag and pipe 3/4 inch pieces into salted boiling water. Testing is required because your ricotta may have more of less liquid depending on the brand.
- If your test did not work, add flour a tablespoon at a time to make batter thicker.
- Cook until nearly doubled in size, 2-3 minutes and serve with sauce of your choice!
