In a bowl mix all your dry ingredients and set aside. Flour, baking soap baking powder, salt, and cocoa powder.
In another bowl beat together your butter and sugars (white and light brown) until well mixed. Add your egg and mix well and follow with your vanilla. Add your red food gel and mix until the colour is well distributed.
Add your dry ingredients to your wet and mix until just combined.
Add your white chocolate into your dough and mix until distributed.
Divide your dough into 12 even pieces and arrange on baking tray. Place in the fridge for 30 minutes. For bigger cookies you may divide dough into 8 equal pieces.
Once ready to bake, bake cookies in preheated oven (oven preheated to 350 degrees). Bake for 11-12 minutes. If you made bigger cookies, you need to add about 2 minutes to your bake time. You may need to bake cookies in batches to avoid the cookies combining together as they spread while baking. Cookies should spread slightly but still be chunky and thick. You can press cookies down if you please for flatter cookies.
