Classic Pecan Pie – Perfect for the Holidays

Classic Pecan Pie

Ingredients
  

Crust
  • 2 1/2 cups (325 grams) all-purpose flour, plus more as needed 
  • 2 teaspoons granulated sugar
  • 1 teaspoon  kosher salt
  • 1 cup (230 grams) unsalted butter, cold and cubed
  • 4-8 tablespoons ice water
Filling
  • 2 and 1/2 cups (250 grams) shelled pecans (pecan halves) roughly chopped with some left whole
  • 3 large eggs
  • 1 cup (240 ml) corn syrup
  • 2 tablespoons molasses
  • 1/2 cup (100 grams) packed dark brown sugar
  • 2 pure vanilla extract
  • 1 tablespoon Grand Mariner
  • 1/4 cup (60 grams) unsalted butter, melted and slightly cooled
  • 1/2 teaspoon salt

Method
 

Make Pie Crust
  1. Mix dry ingredients, flour, sugar and salt together in a large clean bowl.
  2. Add your cubed cold butter and you a pastry cutter to cut the butter in until a small crumb is formed. Alternatively you can place all dry ingredients and butter into a food processor and pulse initial. corse crumb is formed.
  3. Carefully add water, 4 tablespoons, then one tablespoon at a time until he dough comes together. You do not want it to be soggy to try your very best not to add more than 8 tablespoons.
  4. Finally on a clean surface pour out dough and divide into to. Form the two pieces into disks and wrap in plastic wrap.
  5. Place in fridge for an hour until ready to use.
  6. When ready to use remove a single pie dough from fridge and roll out on a lightly floured surface and place in a clean pie bowl.
  7. Crimp edges into the edges into the bowl and trim any excess edges.
  8. If this is prepared ahead of time I like to keep in the fridge until ready to use.
  9. The second pie crust can be used right away for a second pie or will keep in the fridge for 2 days. Alternatively, you can freeze for up to a month and thaw before use.
Make Filling
  1. Preheat your oven to 350 degrees.
  2. In a bowl mix together all the ingredients of the filling except the pecans. Mix until well combined.
  3. In a prepared pie plate, add your pecans in the pie dish.
  4. Fill your pie dish with pecans with your liquid filling. The pecans
  5. Place your pie in the oven and bake for 50-55 minutes until set.
  6. Let cool completely before cutting into it for last least 3 hours but ideally for 5.
