This red lentil coconut curry has all the tasty richness of a coconut dipping sauce that you would eat with roti. It is inspired by traditional Indian cooking though the methodology strays slightly from more traditional preparations of dal. It is savoury, so flavourful, and easy to make. This recipe is a short cut because it does not require any chopping of veggies or aromatics, and it relies on the flavours from coconut milk, dry spices, and a store-bought curry paste to carry the dish. A recipe for roti is included, but store-bought roti is also a good option.
