Did you know Colorado means “colour red”? My first time making Chile Colorado and I think it turned out pretty well 🌶️🌶️

Yes, this has also been part of the meal prep line up (just need to add a side of veg to make this more complete). It’s actually quite a simple recipe. It is essentially beef that has been braised in red chilies. The sauce is rich, fairly smooth and deeply flavourful. I used beef chuck this time, but I think in the future I might try ossobuco because I really love the end product of ossobuco. I find beef chuck just a bit leaner.

Enjoyed it with rice and pinto beans as well as a flour tortilla 👌🏿 I was to try this in a burrito or quesadilla.

Filipino Kare-kare! An absolute delight to make an

Filipino Kare-kare! An absolute delight to make and eat! When I made maafe, a Senegalese peanut stew I got tons of comments, saying that I should make his Filipino stew Kare-kare! Ingredients super easy to source and the only ingredient I was unfamiliar with were anatto seeds but they were very easy to find. They add a nice bright reddish orangey to the dish and I even made more annato oil to use as garnish.

Oxtail is typically used here but I have seen crispy pork belly as the protein for this dish as well! Probably would be cheaper to use anything other than oxtail tbh.

For my Ghanaian’s Bagoong actually reminds me a bit of shito because of the texture, umami and shrimpiness. Though it is different that shito because there are no chillies used in the simplest versions of Bagoong and it is sweet. I didn’t realize how many varieties of Bagoong there were until I made this. I got Ginisang Bagoong.

Egusi and pounded yam! 🙌🏿 Egusi is melon/gourd seeds which have been ground for this recipe. Honestly such a comfort meal! So so tasty, savoury and umami from the dry crayfish and locust beans (dawa dawa or iru, amount many other names). Yes I also meal prepped this meal hence the variation in pounded yam balls for time of day/ hunger levels. The egusi freezes very well as well in case you make a big batch like I did.

You can use a variety of greens like bitter leaf, uziza leaf, ugwu. You can honestly find these frozen at west African grocery stores but I prefer fresh spinach in my egusi instead.

Also a note on the pounded yam. Yes this is not pounded but I find making it in the pot just kneading it so convenient and works surprisingly well.

A chicken salad! More veggies than chicken and I usually add an additional soft boiled egg. Tasty, easy, kinda therapeutic to make with all the chopping. Very customizable and part of the meal prep rotation these days. I sometimes top with hot sauce or even a squeeze of lemon when I want it more acidic.

Picadillo Mexican style! It is absolutely delicious. It’s so easy to make and has been a go to when it comes to meal prep recently. It is quite cheap as well and perfect for these frigid temperatures we’re experiencing in Toronto. It is eaten in several Latin American countries and made with slight variations depending on which country you’re from.

I first had this as a family meal working at a community centre and since then it’s been a staple.

Catch me making another version of the same brown butter banana bread recipe! You can see below for ingredient list. No matter how I spruce this up it is always a crowd pleaser. This marbled version turned out great! The chocolate swirl was slightly more dense and almost had a cakey brownie texture.

Tips for getting this to turn out perfectly, weigh ingredients. If you can’t weigh, I strongly suggest spooning and levelling flour so you don’t add too much. Also try not to over mix or it will make your loaf/ cake very dense.

2/3 cup (150 grams) of unsalted butter
1 cup (190 grams) packed dark brown sugar
5 medium-large very ripe bananas
2 large eggs
1 teaspoon vanilla extract
1 teaspoon table salt
1/4 teaspoon nutmeg (optional)
1 teaspoon baking soda
1 teaspoon baking powder
2 cups spoon and levelled (260 grams) all-purpose flour
2 tablespoons cocoa powder

Cream cheese frosting:
1/3 cup butter
225 grams cream cheese
3 cups of powdered sugar
1/4 teaspoon salt (optional)
Bake at 350 degree for 50-55 min

Shrimp Toast! Made because I had shrimp leftovers but always a tasty treat. I especially liked these with the brioche buns, added a nice sweetness. As a Ghanaian I eat okra a lot so omitting is not for a lack of love, just my mood. Please feel free to include if you prefer it with a little bit of added texture from the okra. 🙌🏿

This is a shrimp, chicken and sausage gumbo that was incredibly delicious but requires some patience. The roux is made from some sort of fat and flour. I used oil and flour and it was cooked down for about 30-40 minutes stirring constantly until it was a deep chocolate brown. I highly recommend making your own stock whether that’s chicken stock or seafood stock for this dish. Homemade stock or good quality stock adds so much flavour and truly elevates the dish. Back to the okra: some recipes add okra to thicken this dish and some use gumbo filé which is a spicy herb seasoning made from the dried and ground leaves of the North American sassafras tree. I used neither but found the dish to be a good texture! Truly delicious and a recipe you should try.
